So easy that a 2 year old can make it… basically.
We almost always have avocados and eggs in our house.
And who doesn’t want to eat this goodness?
Also, happens to be keto, if you’re into that.
Here’s what you need:
- avocado
- eggs
- cheese (we used shredded cheddar)
- salt and pepper
- BACON (crumbled or bits)
Directions:
- slice avocado and remove pits
- scoop some out so the egg fits
- crack egg into avocado
- cover with cheese
- sprinkle salt and pepper
- bake at 425° for 12 min
- top with bacon
**Note- increase baking time 3-5 if you prefer a well done egg
Optional toppings:
- tomatoes
- scallions
- ham
- herbs like basil
- chili flakes
- roasted red peppers
- fried onions
- …so many yummy options
