Do you want to eat cake for breakfast? But, like, healthy cake?
It doesn’t look or taste healthy AKA bland.
It is warm and satisfies you sweet tooth. With no guilt.
The secret: blend your oatmeal into cake. Who knew?
Ingredients:
- 1 banana (or 4 Tb flour and 1 Tb sugar)
- 1 C oatmeal
- 2 eggs
- 1/4 C milk
- 1/2 ts vanilla
- 1/2 ts baking powder
- fresh or frozen blueberries
Directions:
- Throw in all your ingredients in the blender, except the blueberries
- Mix
- Put in a small baking pan
- Top with blueberries
- Bake at 375° for 30 minutes
Notes:
- you can add 1 Tb chia seeds for extra nutrients
- i use extra large eggs but if you are using smaller ones, add 1 more (3 total)
- you can blend with blueberries, it only makes a visual difference
- use any frozen or fresh fruit toppings you want
- or top with nuts and chocolate chips
