Perfectly tangy and crunchy cucumber salad.
It is great as an appetizer, snack or side dish.
I always see people ordering this salad at Asian restaurants. Great idea.
Until I saw it on the menu for $9.
That just seems like too much for a simple cucumber salad.
Anyone else have weird things they choose to be cheap about?
No more excuses: make it at home.
You probably already have most of this stuff anyway.
Ingredients:
- 8 Persian cucumbers, or 2 English cucumbers
- 1/3 C rice vinegar
- 2 ts sesame seed oil
- 2 ts sesame seeds
- salt and pepper
Popular option: 1 Tb sugar
Directions:
- Cut cucumbers in 1/2 inch coins
- Put all ingredients in a mixing bowl
- Garnish with sesame seeds
Notes:
- it is ready to eat immediately unless you add sugar, then throw it in the fridge for an hour
- if using regular cucumbers, cut them in half and deseed them
- you can also add chili oil or sliced fresh chilis
- stays crunchy for about 2 days
