That noodle dish that always sounds good.
It just makes sense.
Food should make you this happy.
Ingredients:
- 15 oz sweet potato noodles
- 3/4 lb of beef (steak, sliced, chuck… whatever you have) sliced thin
- bag of baby spinach
- 1 medium carrot, sliced into 3 inch sticks
- 1 yellow onion, sliced
- 1 small red bell pepper, sliced
- 1 egg
Sauce:
- 1/2 C soy sauce
- 1/4 C sugar
- 1/4 sesame seed oil
- 2 minced garlic cloves
- couple dashes of black pepper
Directions:
- Mix together sauce
- Add 2 Tb of the sauce to sliced meat and marinate while you prepare other veggies
- Boil sweet potato noodles for 8 minutes and drain
- Rinse in cold water and randomly cut with scissors
- Otherwise, these noodles are LOOOONG
- Sauté each veggie in a frying pan with a little oil and a shake of salt
- Cook meat and drain
- Combine noodles, meat and veggies
- Add sauce and mix
Garnish:
- egg (beat an egg and fry it, thinly spreading it in the pan and thinly slice into ribbons)
- scallions (I use only the green part)
- sesame seeds
Notes:
- easily made into a vegetarian dish (usually a whatever is in the fridge dish for me)
- I like to add this combo for color and texture but onion, spinach and carrots are commonly found in this dish
- do not overcook veggies, you want them to have a bite
- I use baby spinach because its convenient, regular is fine
- if you want it spicy, add Korean chili flakes and sriracha
- sriracha works really well and keeps the balance in the dish with some sweetness
