Do you need to make something that heats up well and lasts a few days?
Something you can just eat when you’re in a rush or feeling lazy…
It barely feels like a recipe because it is so simple.

Doesn’t dry out when you heat it up in the microwave either.
It checks all the tasty and easy boxes that we love in a recipe.
Ingredients:
- 4 chicken thighs
- 1 Tb olive oil
- 1 Tb minced garlic
- enough lemon pepper seasoning to cover the thighs (especially the skin on tops)
Directions:
- Pat the chicken thighs dry with a paper towel (for crispier skin)
- Brush the top with olive oil
- Sprinkle with garlic and lemon pepper seasoning
- Bake at 400° for 40 minutes
Notes:
- Yes, lemon pepper seasoning is an easy out BUT you can make it home-y by adding lemon zest
- Are you familiar with our recipes? because a pinch of chili flakes never hurt anyone
- Bake for 35 minutes and broil on HIGH for the last 5 minutes (not necessary but more eye pleasing)
- Debone and stir fry with rice (and whatever veggies you have) with:
- a swirl of soy sauce
- a swirl of sesame seed oil
- and a small squeeze of hoisin sauce
- an egg
FOR seriously yummy fried rice!
