Sweet and salty goodness.
You know what goes perfectly with tanghulu candied bacon?
Beautiful and shiny candied fruit on a skewer.
Try it.
This is another ‘recipe’ that is barely a recipe.
Ready?
Cut and skewer fruit. Any fruit.
I zigzagged the strawberries because I’m fancy but not the grapes because I got lazy.
Bake half pieces of bacon at 400° for 15 minutes until crispy.
I love to bake bacon because it comes out perfectly with zero curled up edges.
Directions:
- Put 1 C sugar and 1/2 C water in a small sauce pan and boil on medium high
- NO MIXING
- After about 8 minutes, the sugar bubbles get tighter and there is less liquid
- You know the mixture is ready when:
- your candy thermometer says 300°
- you dip your chopstick in the mixture and it instantly hardens in cold water
- OR you can tell its a minute away from turning into a caramel color
- You know the mixture is ready when:
- Twirl your fruit skewers quickly (a light coating) and place on parchment paper
- Throw in bacon pieces and fish them out onto parchment paper
- Wait for 10 minutes for the sugar to harden
Notes:
- you can use ANY fruit but the other ones I like to use are orange segments, kiwis and pineapple
- if you don’t have parchment paper, stab the skewers into an empty egg carton (use short skewers for this method)
