Watermelon sugar high, right?
Maybe not, however, this salad stands out from all other watermelon salads.
WHY?
Radish sprouts. Wonderful, peppery, crunchy radish sprouts.
Absolutely… mouth watering.

Please tell me that you made this and loved it.
Ingredients:
- 5 cups of cubed watermelon
- half an English cucumber, sliced (or deseed a regular cucumber)
- 1/4 C red onion
- a small handful of chopped mint
- 1/2 container of radish sprouts (or 2 handfuls of arugula)
- 4 oz shaved Parmasan cheese (or 4 oz crumbled Feta cheese)
Dressing:
- equal parts olive oil and lime juice (about 3 Tb of each)
- liberal salt and pepper
Directions:
- Make dressing
- Add all other ingredients
- Pour in dressing and mix
- Top with extra cheese
Notes:
- if you use arugula instead of radish sprouts, then wait to dress the salad until you’re ready to eat, or day of
- I prefer crumbled feta, but honestly, I made this for a pregnant friend so we used Parmesan and it was deliciously salty
- EXTRA fresh cracked pepper on top makes the dish over the top
- you can also substitute sliced Persian cucumbers that will release less water
